Took some time off from blogging and recipe sharing to reflect, practice self-care, and spend time with family. We don’t realize the more our minds stay on automatic pilot, the quicker we can burn out. My goal here is to help people heal but how can I do that if I don’t take the time out to heal myself? Its a constant upkeep but one that results in necessary growth, change, and most importantly, peace.
As mentioned on my Instagram and Facebook, I want to bring together a series of recipes that can “help” our moods. And by help I mean baking and cooking with all whole ingredients and low-glycemic sugars. This will lessen cortisol and blood sugar spikes and drops which can help you stay energized and less groggy throughout the day.
These lavender cookies were one of the first ideas that popped in my head. I love lavender and use it as an oil, body wash, clothing wash, you name it! It really is a great calming scent. A few years back I bought a lavender cupcake and thought ” man this sh*t even tastes good too!” ha. So this is an easy and fun recipe and I hope you guys enjoy them as much as I do.
Recipe for Gluten-Free Lavender Cookies:
- 1 3/4 cup of All Purpose Gluten-Free Flour ( I use Bob’s Red Mill)
- 1 tsp of baking soda
- 1 tsp of baking powder
- 1 tsp of salt
- 2 eggs
- 1/3 cup of coconut sugar
- 1/2 cup of coconut oil
- 1-2tbsp of ground lavender stems ( can pick them out in the spice rack at Whole Foods!)
- 1 tbsp of vanilla extract
Preheat oven to 35o degrees. Line a baking sheet with parchment paper. Start to mix the dry ingredients ( flour, baking soda, baking powder, salt). Ina separate bowl, mix together eggs, vanilla, sugar, oil, and lavender. Mix dry and wet ingredients together and scoop into balls onto your baking sheet. Bake for 15min.
