This is my FIRST time making “nice” cream. Nice cream is just a term for vegan ice cream. The creaminess of the bananas and coconut milk really pulls the whole recipe together. I added a touch of color, extra sweet, and antioxidants by adding some pomegranate…and there ya have it! Super simple, fast, and an easy way to enjoy your favorite summer time snack.
Pomegranate “Nice” Cream Popsicles Recipe:
2 cups of full fat coconut milk (canned)
1 tsp of cinnamon
1 cup of pomegranate seeds
Slice bananas into 1 inch pieces. Put bananas, coconut milk, and cinnamon in a blender and blend until smooth. After the mixture is nice and creamy, fold in the pomegranate seeds. Pour mixture into a BPA free popsicle mold (like this one) and freeze overnight. You may have to run the popsicle mold under warm water to loosen the popsicle. Serve and enjoy!
