Oatmeal Cashew Carob-Chip Cookie Recipe

1/2 cup of almond flour

1/2 cup of rolled oats

pinch of sea salt

2 eggs

1/3 cup of palm shortening

1/2 cup of coconut sugar

1/3 cup of carob chips

1/2 cup of raw cashews (chopped)

Preheat oven to 350 degrees. In one bowl, combine the flour, oats, and salt. In a separate bowl, combine the eggs, shortening, sugar, carob, and cashews. Combine all ingredients together in one bowl. Divide the mixture into small cookies on a lined baking sheet. Bake for 18 minutes.
