Pumpkin Chia Mini Muffins

It’s the most wonderful time of the year.. 🎃 🎃 🎃 these Pumpkin Chia Mini Muffins are my go-to snack these days. Some of you may not know but the health benefits of Chia seeds are endless.. perfect for plant- based peeps too. These include: healthy omega 3 fatty acids for healthy triglyceride levels, great source of fiber, great for digestion issues, loaded with protein and antioxidants. Pumpkin Chia Mini Muffins:
1/2 cup of almond flour
1/2 cup of coconut flour
1 tsp of baking soda
2 tbsp of chia
1/2 can of organic pumpkin purée (no sugar added)
3 tbsp of coconut sugar
1 tsp of nutmeg
1 tsp of cinnamon
Using coconut flour can make them a little more dense so you can opt out and just make it with almond flour instead. Bake at 350 for 15 min.
