Peanut Butter Oatmeal Loaf

About a year ago, I was eating a pretty strict Paleo diet. For those of you not familiar with the Paleo trend, it consists of meat, fish, tons of greens, some fruits, healthy fats and oils like avocado, coconut and olive oil, nuts, and seeds. It eliminates all dairy, legumes, and grains. Peanut butter, as you know, is not a nut. Its a legume..and can also be inflammatory to most people and a huge allergen. However, for those of us that don’t have a reaction to the deliciousness of PB, I would suggest adding it back to your diet. If you are going Paleo for health reasons, then that is totally fine..but I promise you, you will miss the creamy, gooey, smooth, “nutty” taste haha. I totally started incorporating more PB into my diet as a great source of protein. I would stick to organic and the less chemicals in the jar, the better. But you knew that already 😉

Peanut Butter Oatmeal Loaf Recipe 

1 1/2 cups of oatmeal (rolled oats)

1 tsp of baking soda

1 tsp of salt

1/4 tsp of nutmeg

1/2 tsp of cinnamon

2 eggs

1/4 cup of organic palm shortening

1 tsp of vanilla extract

2-3 heaping tbsp of creamy PB


Prep: Preheat oven to 350 degrees. Start by mixing the dry ingredients together in your mixer. Slowly add in the shortening, eggs, vanilla, and PB. pour oven a greased bread pan and bake for 25 min.
