Gluten-Free Peanut Butter Cookies (2 ways!)

I started using peanut butter more in my baking because 1. I’m obsessed with it and if I have a jar handy in my house, I will eat the whole thing. 2. It adds a moist/creamy texture to a lot of baked goods. I actually never made homemade peanut butter cookies before until now. Weird, I know. First recipe is for a more crumbly, harder cookie and the second recipe is for all you chewy-only cookie lovers. Let me know if you try one of these out, or both!

 

 

Gluten-Free Peanut Butter Cookies -Crunchier Cookie

For a crumbly and crunchier cookie..

Ingredients
  • 1 1/2 cups of creamy organic peanut butter
  • 1/2 cup of grass-fed butter or Earth Balance dairy free butter
  • 1 cup of coconut sugar
  • 2 eggs
  • 1 tsp of vanilla
  • 1 cup of almond flour
  • 1 tsp of baking soda
  • Sprinkle of lemon zest (bring out the flavor or everything else!)
Directions
  • Step 1 Preheat oven to 350 degrees
  • Step 2 Start by mixing the peanut butter, eggs, vanilla, sugar, and butter in your mixer. (butter should be softened)
  • Step 3 Next, add the flour and baking soda mixture little by little in into the wet mixture and have your mixer on low speed.
  • Step 4 Using a spoon (I like to use an ice cream scooper!) place cookie mixture on a cookie sheet or greased pan (about 2 in in length)
  • Step 5 Press the cookie down with a fork to make the fork lines across both ways
  • Step 6 Bake for 8-10 min. Let cool and enjoy!

For a chewier cookie..

Ingredients
  • 1 cup of creamy organic peanut butter
  • 1/2 cup of grass fed butter (for these i used the Earth balance dairy free option instead!)
  • 3/4 cup of coconut sugar
  • 1 tsp of vanilla
  • 1 egg
  • 1/2 tsp of baking soda
  • 3 tbsp of almond flour
Directions
  • Step 1 Preheat oven to 350 degrees
  • Step 2 Start by mixing the peanut butter, vanilla, egg, sugar, and butter together until smooth and creamy.
  • Step 3 Next, add in the baking soda and 3 tbsp of almond flour.
  • Step 4 Place cookies onto a greased pan or baking sheet (about 2 in chosen length) – I didn’t press down on these.
  • Step 5 Bake for 8 minutes and let cool.
