Oatmeal is definitely a great gluten free option for breading chicken. It is super simple to make and can be mixed with any flavoring. I specifically chose turmeric for its anti-inflammatory benefits. Any way that I can get turmeric into my cooking, I will!
Recipe for Oatmeal-Turmeric Crusted Chicken and Spicy Sweet Potato Mash
- 3oz of chicken (any type of your choice)
- 1 cup of oatmeal
- 2 tbsp of turmeric
- 3 tbsp of olive oil
- 3 sweet potatoes
- 2 tbsp of coconut sugar
- 1 tbsp of cayenne pepper
Preparation:
Preheat the oven 35o degrees. Begin to pulse oatmeal in the food processor until it turns into a flour- like consistency. Add turmeric and a pinch of salt. Start by breading the chicken using some olive oil to help the oatmeal stick to the chicken. Place on a pan and coat with more olive oil and cook for about 35-40 minutes. Take cooked sweet potatoes in a pan and add the coconut sugar and cayenne. Begin to mash the potatoes and let cool. Garnish with come parsley (optional).
