Oatmeal Chocolate Chip Cookies {Dairy-Free, Gluten-Free}

Oatmeal Chocolate Chip Cookies Recipe 

1 cup of oats (grounded in a blender)

1 tsp of baking soda

1 tsp of baking powder

1 tsp of sea salt

1 tsp of cinnamon

1/4 cup of Organic Vegetable shortening

2/4 cup of applesauce (equals 2 eggs)

1 tsp of vanilla

1/2 cup of dairy free chocolate chips. (I use my fav, Enjoy Life Brands!)


Preheat oven to 350. Mix together all the dry ingredients (oats, baking soda, powder, cinnamon, and salt). In a separate bowl, using an electric mixer, mix together the shortening, applesauce and vanilla until fluffy. Mix both sets of ingredients together and fold in chocolate chips. Bake for 20 min and let them cool. They will end up being super moist and soft!
